It’s that quiet pocket of time before the world wakes up and starts demanding things from you. It’s just you, the steam rising from the mug, and the mission for the day.

If you’ve been following along, you know our roastery team has been busy. We’ve been out there scouting, looking for the kind of beans that don’t just taste good, but have the backbone to stand up to a long day’s work. We’re kicking off a new series here at Coppertop Coffee & Trading Co. We’re calling it the "Six Nations." It’s our deep dive into the six origins that form the backbone of what we do: Mexico, Peru, Costa Rica, Colombia, Brazil, and Guatemala.

The Continental Grind

When people think of Mexican coffee, they sometimes overlook it for the bigger names in South America. That’s a mistake. Our crew has been clear about this from day one: Mexican coffee beans have a rugged refinement you won't find anywhere else. They grow in high-altitude regions like Chiapas and Oaxaca, where the soil is rich with volcanic nutrients and the air is thin.

That environment produces a bean that is dense, hard-working, and incredibly consistent. It’s a lot like the folks we know back home in the Southwest. It’s coffee that doesn’t need to shout to get your attention; it just does its job, and it does it exceptionally well.

At Coppertop, we look for beans that reflect our values. We’re a Specialty Beverage company, which means we aren't interested in the mass-produced, bottom-of-the-barrel stuff you find at the grocery store. We want the single-origin gems that tell a story.

Mexican coffee is the ultimate "morning-side" brew. It typically features a lighter body than some of its southern cousins, but it makes up for it with a flavor profile that’s heavy on chocolate, brown sugar, and a subtle nuttiness. While we’re talking coffee today, the Sunday Grind-Side is about the whole experience. We apply that same "Six Nations" scouting mentality to everything we offer. The Roastery Team’s Guide: 3 Days in Chiapas

If you want to take the Mexico Edition off the page and onto the road, this is a solid three-day run through Chiapas. It’s built for early starts, strong coffee, and a closer look at the country behind the cup.

  • Fly into: Tuxtla Gutiérrez (TGZ) or Tapachula (TAP)
  • Stay: Finca Hamburgo (Tapachula) - Wake up in the clouds on this historic 19th-century coffee plantation.
  • Dine: Restaurante Las Pichanchas (San Cristóbal) - Authentic Chiapaneco flavors; try the 'Sopa de Fiesta.'
  • Sip: Traditional Café de Olla, brewed in clay pots with cinnamon and piloncillo.
  • Day 1: Start in Tapachula. Head to Finca Hamburgo for an overnight stay. Tour the historic coffee mill and learn the “Live the Coffee” process.
  • Day 2: Drive to the highlands of San Cristóbal de las Casas. Explore the cobblestone streets and the indigenous markets of Zinacantán.
  • Day 3: Take a boat ride through the massive Sumidero Canyon. End the trip with a final cupping session of fresh Chiapas Mexican coffee beans in a local cafe.

The Sunday Ritual

There’s a specific way to enjoy a Sunday morning Mexican brew. First, put the phone away. Second, get the water temperature right, not boiling, but just under. Use a coarse grind if you’re using a French Press, or go a little finer for a pour-over.

As you sip, look for those notes of cinnamon and cocoa. It’s a smooth, balanced experience that doesn't overwhelm the palate. It’s the perfect companion for planning your week or just staring out at the mountains as the sun finally clears the peaks.
