This year, we’re taking the backyard BBQ to a higher level. We’re talking about a crust so dark and savory it’ll change how you look at a ribeye, followed by brownies so rich they’ll keep the conversation going long after the sun sets.

The Science of the Smoke: Why Coffee Belongs on Steak

There’s a reason professional pitmasters reach for coffee beans when they’re prepping for a competition. Coffee is naturally acidic. Much like a splash of red wine or a squeeze of lemon, that acidity serves a functional purpose: it acts as a natural meat tenderizer. The tannins in the coffee work their way into the muscle fibers, breaking them down and ensuring every bite is as tender as possible.

But it’s not just about texture. It’s about the "bark." When you hit a coffee-rubbed steak with high heat, the sugars in the rub and the natural oils in the beans caramelize. This creates a bold, dark crust that seals in the juices. For this recipe, we’re utilizing our Cowboy Blend. Coffee doesn't necessarily make things taste "like coffee" when used in baking; instead, it acts as a flavor enhancer for the cocoa, making the chocolate taste darker, richer, and more complex.

For this, we’re using a double shot of Coppertop Espresso. It’s the secret weapon that turns a standard brownie into something legendary.

The Inventory:

  • 1 cup unsalted butter (melted)
  • 2 cups granulated sugar
  • 2 large eggs + 1 egg yolk (for extra chewiness)
  • 1 double shot (approx. 2 oz) of hot Coppertop Espresso
  • 3/4 cup high-quality cocoa powder
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 cup dark chocolate chunks

The Method:

  1. Heat it Up: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. The Base: In a large bowl, whisk the melted butter and sugar together.
  3. The Boost: Add the eggs one at a time, then pour in that hot double shot of espresso. The heat of the espresso helps "bloom" the cocoa powder in the next step.
